No carb “Manicotti”

So Mr. notsoChubby has been amazing lately with trying to find new ‘low-carb’ recipes for us for our dinner time.  Since learning I have PCOS I’ve had to really take to heart the fact that I have insulin resistance.  With in that I have to keep each meal at 30g of carbs.  This lovely recipe is fantastic as it has no carbs and is GREAT for late night meals.

  • 8 oz ricotta cheese (or cottage cheese)
  • 1/2 cup shredded mozzarella (we used buffalo mozz)
  • 1/8 cup parmesan cheese (we used double gloucester because of a lack of parm but it still tasted great)
  • 1 egg
  • 1/2 cup tomato sauce (not ketchup, more like pasata)
  • 6 or 4 larger slices of sandwich ham/turkey/chicken
  • 3/4 tsp mixed Italian herbs

Pre-heat your oven 180C/360F Mix the cottage cheese, parmesan, 3/4 of mozzarella, egg, and the herbs in a bowl.  Put 1/2 the tomato sauce in the bottom of a casserole dish.  Take your ham/turkey/chicken spoon your cheese mixture in the middle of them and roll them up (like a tortilla).  You can secure them with toothpick if you want.  Place in the casserole dish.  Pour the rest of your tomato sauce over them.  Then sprinkle the remaining mozzarella over the “tortillas”.  Now it’s time to put them in your preheated oven.  Bake for 20-25 minutes or until the cheese is bubbling.  The take them out and enjoy!!
