Ohio State “Buckeye” Recipe

6 Jul
This recipe isn’t exactly healthy but the result is amazingly delicious.  🙂

  • 340 g (1 1/4 cup) Smooth Peanut Butter
  • 250 g (2 cups) Powdered Sugar
  • 1 tbsp Vanilla Extract
  • 115 g (1/2 cup) Butter
  • 350 g (12 oz) Chocolate

  1. Line a baking sheet with waxed paper; set aside.
  2. In a medium bowl, Cream peanut butter, butter and vanilla.
  3. Add confectioners’ sugar one cup at a time.  Once stiff use hands to mix together. Mixture will be extremely crumbly but this is what you want.
  4. Shape into balls using 2 teaspoons of dough for each ball. Place on prepared pan, press a toothpick into each ball (to be used later for dipping) and refrigerate.
  5. Melt chocolate together using method you know best. Stir occasionally until smooth, and remove from heat.
  6. Remove balls from refrigerator and dip into melted chocolate.
  7. Return to wax paper, chocolate side down, and remove toothpick.  Use a little bit of water on your finger to smooth over whole left by toothpick.
